Apple, Peach and Chia seed Banana bread

Ingredients
  • 1 3/4 cups flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 and 1/2 teaspoon cinnamon
  • 1/2 cup white sugar
  • 1/2 cup dark brown sugar
  • 1 eggs* (you can skip the egg and add more chia seeds mixed with extra milk/water)
  • 1/3 cup coconut oil
  • 1/3 cup peach applesauce
  • 3 tablespoons vanilla almond milk
  • 1 teaspoon vanilla extract
  • 3 large frozen bananas (slightly thawed)
  • 1 tablespoon of chia seeds
Instructions
  1. Mix together flour, baking soda, salt, cinnamon and sugars.
  2. Blend in bananas, egg, oil, applesauce, milk, chia seeds and vanilla.
  3. Pour batter into greased loaf pan (I used a 9"x13)
  4. Bake at 350 degrees for about 1 hour or until toothpick test comes out clean.
